Meal: Roasted Pork Loin with Creamer Potatoes and Carrots
Description: A small boneless pork loin roast is roasted until golden alongside halved creamer potatoes and carrot chunks. Leftover pork slices well for sandwiches or lunches.
Sale items used: Whole Boneless Pork Loin, Creamer Potatoes, Whole Carrots
Prep time: 60 minutes
Serving note: Buy about 1.5 lb of pork loin (a small piece cut from the whole loin, ask the butcher to cut it). Use the full 1.5 lb bag of creamer potatoes and about 4 carrots. Roast at 400F for 45-55 minutes until 145F inside. Total time is near 70 minutes with resting, so prep the vegetables and season the pork up to a day ahead.

Tuesday
Meal: Skillet Turkey Spaghetti with Peppers
Description: Ground turkey is browned with sliced multicolor peppers and onion, then simmered in jarred marinara and tossed with spaghetti. It is a one-skillet dinner with plenty for two.

Meal: BBQ Chicken Thigh Sandwiches with Baked Beans

Thursday
Meal: Breakfast Sausage and Potato Skillet with Apples
Description: Crumbled breakfast sausage is browned with diced potatoes, onion, and a leftover pepper, then finished with sliced apple for sweetness. It makes a hearty, budget-friendly dinner for two.
