5-DAY MEAL PLAN

Monday
Meal: Kidney Bean and Corn Burrito Skillet with Queso Fresco
Description: Kidney beans, sweet corn and spices are simmered together in one skillet until thick and savory. It is topped with crumbled queso fresco for a creamy, salty finish.
Sale items used: Goya red kidney beans, corn 4 pack, queso fresco
Prep time: 20 minutes
Serving note: Use 1/2 can kidney beans (drained), 1 ear of corn (kernels cut off), 1/4 of the queso fresco block (about 1 oz) and 1/4 tsp each cumin and chili powder. Save the other half of the beans for Thursday's side or lunch. Keep the 3 remaining corn ears for Wednesday and extra meals.

Tuesday
Meal: Cannelloni Stuffed with Ricotta and Baked in Cherry Tomato Sauce
Description: Cannelloni tubes are filled with seasoned ricotta and baked in bubbling cherry tomato sauce. A scoop of the sauce on top makes a cozy single-portion bake.
Sale items used: ITALIAMO cannelloni pasta, ricotta cheese, ITALIAMO cherry tomato sauce
Prep time: 45 minutes
Serving note: Use 4 cannelloni tubes, 1/2 cup ricotta (about 4 oz), 1 egg yolk or a pinch of salt and pepper to bind, and the whole jar of cherry tomato sauce. Bake covered at 375F for 30 minutes. Fill the tubes up to a day ahead and refrigerate, then bake when ready. Save the remaining ricotta and pasta for later use.

Wednesday
Meal: Pan-Roasted Yellow Potatoes with Corn, Gorgonzola and Mozzarella
Description: Crisp, golden diced potatoes are pan-roasted with sweet corn kernels. Crumbled Gorgonzola and melted mozzarella finish the skillet for a rich, tangy dinner.
Sale items used: yellow potatoes, corn 4 pack, dolce Gorgonzola cheese, sliced fresh mozzarella cheese
Prep time: 35 minutes
Serving note: Use about 3/4 lb potatoes (2 medium, from the 5 lb bag), 1 ear of corn (kernels cut off), 1 oz Gorgonzola and 2 slices mozzarella. Parboil the potato cubes 5 minutes to speed up browning. Cook in 1 tbsp olive oil.

Thursday
Meal: Pesto and Queso Fresco Fajita-Style Quesadillas with Hummus
Description: Fajita tortillas are filled with pesto, crumbled queso fresco and sauteed corn, then griddled until crisp. Served with a scoop of hummus for dipping.
Sale items used: small fajita flour tortillas, ITALIAMO Sicilian pesto sauce, queso fresco, hummus, corn 4 pack
Prep time: 20 minutes
Serving note: Use 2 small fajita tortillas, 1 tbsp pesto, 1 oz queso fresco, 1/2 ear corn kernels and 1/4 cup leftover kidney beans if desired. Serve with about 1/4 cup (4 tbsp) hummus. Cook 2 to 3 minutes per side in a dry skillet.

Friday
Meal: Truffle Burrata Fusilli with Artichokes and Parmesan
Description: Al dente fusilli is tossed with tender artichokes and a little of their oil, then topped with a creamy truffle burrata. Parmesan adds a salty, nutty finish.
Sale items used: BELGIOIOSO burrata with black truffles, ITALIAMO fusilli pasta, ITALIAMO whole artichokes in sunflower oil, shredded Parmesan cheese
Prep time: 25 minutes
Serving note: Use 3 oz dry fusilli (about 1/5 of the bag), 2 to 3 artichokes quartered, 1 burrata ball (one ball from the pack, about 2 to 4 oz), and 2 tbsp Parmesan. Add a splash of pasta water to make a light sauce.

Check the label: many hard cheeses are set with animal rennet.
