BUDGET RATIONALE

Why these meals: This week's vegetarian plan leans on a few Lidl buys that each cover more than one dinner. The 4 pack of corn at $1.99 covers Monday's kidney bean burrito skillet and Wednesday's pan-roasted potatoes. The $1.99 queso fresco is split between Monday's skillet and Thursday's pesto quesadillas. Shredded Parmesan at $1.99 is used on Tuesday's cannelloni and again on Friday's fusilli, so you only buy one package. Friday's truffle burrata at $5.92 is the one treat that closes out the week.

Monday

Tuesday
Meal: Cannelloni Stuffed with Ricotta and Baked in Cherry Tomato Sauce
Description: Cannelloni tubes are filled with ricotta and shredded Parmesan cheese, then baked under ITALIAMO cherry tomato sauce until bubbling. Serve with a simple olive oil drizzle.
